Well, I would advise you to look around for some FRC robotics teams around you. They are high school teams but they do fairly complex stuff already and have some real engineers as mentors. Team 781 is about an hour and a half west of you. Also Michigan has an extremely high concentration of teams. If distance isn't an issue, Team 254 Cheesy Poofs are a really well known team out of California. Hell the team that won the Battlebots 2015 competition had several Team 254 mentors on it.
That's a good idea - they likely won't be able to use it in competition since they are locked into using National Instruments stuff for at least the next few years (we already contacted FRC organizers about trying to get our stuff into the comps) - but I'm sure the students involved will be able to build some cool stuff as side projects.
We've actually sponsored team 4716 and are looking at working with some local teams for a bot brawl contest going on later this summer in our city: http://www.botbrawl.ca/

Sorry, I have no contact with either team. I just did a quick search and saw that 781 was nearby and I mentioned team 254 because they are one of the best teams in FRC and would have plenty of resources for big off season projects.
Now if you want, you could go to http://www.chiefdelphi.com/ which is essentially the primary FRC forum. I am sure that there would be plenty of teams that would love to work with a project like this. Posting on chief delphi would also probably be the best course of action to attract teams for the bot brawl.
I live in Florida and am part of team 1557, a fairly unknown team that wouldn't have the resources to spare for a project like this. I love the project so far from what I've seen and may end up using it in some of my personal projects. I've followed the project and will try to get in contact with you if my team or I would be able to contribute at all.
@Pete OConnell- we're releasing our own single board computer based around the Zynq along with modular I/O cards, Wi-Fi, BT, IMU and optional 4G/LTE. There's more details about the specs on the project page.
We're working on a platform for robotics and going to launch via crowdfunding in the fall. It would be great to have some people on hackaday building with our stuff and posting guides of how to do it. We're doing a limited pre-production release that will ship around end of August so if you're interested shoot us a message.
