I attended a course on Wireless projects with Arduino with Jorge at SinDormir.net and he covered the XBee in great detail.
They are very intelligent little pieces of hardware. Probably the cause of your headaches lies in the initial setup of each module. It's a tricky process. Tell me more to see if I can be of help. If it escapes me, there's always Jorge as a last resource (and very good!

I'm honestly not super familiar with xbee, but since nobody else has responded yet I thought I'd give it a shot. I found this tutorial series on youtube that looks like it might help you out. The guy looks rather silly, but he does demonstrate that his tips on xbee communication and Arduino code work. I think this should get you through your project. I'll put a link to the first video at the bottom.
I've done a little wireless communication but I'm by no means an expert, so take this with a grain of salt. The xbee might not be the easiest or most cost effective thing for your project. You can get some pretty cheap RF links off of SparkFun that seem to be a lot easier to use than an xbee. I'll leave a link to another youtube tutorial on how to use those as well. Sorry if you don't like videos, personally I understand things better when they are verbally explained to me.
