You can add any commands you want to the docker file including git clone commands. Git clone you stuff in to to the /root/.FreeCAD/Mod/ folder. Should be all good.
Sure. The build process is pretty straightforward and addons can be included in your own build. Could probably also include the whole KiCAD package right in with FreeCAD if you want.

Ha, nice. Does can one install any extension, e.g. KicadStepUp? I'm only a neophyte to FreeCAD.

Normally one installs KSU from a git repo so that it gets updates. Is that kind of install supported?
