Frustrated solid nematic fluid or block copolymer for me, but if you want to run a lot of current through it, maybe it's worth looking for Weyl fluids somehow.

What I know - this is used in suspension of cars

And magnetorheological fluid if you are prepared to use an electromagnet as an intermediate item (may allow you to contain the fluid without having to seal electrodes).
