So I've made loads of progress with the design. I have changed the joints substantially and redesigned the base completely, this is after 3d printing most of the version 1 parts and seeing how everything looked together. After that I got very distracted working to improve my 3d printer and then with wedding plans. Everything has now settled down and I hope to be printing the V2 prototype parts over the next few weeks.

Really keen to see how you go with this and how well the project may be able to scale, good luck with it!

Hey Andrew, thanks :) I'm pushing the limits of what can be done using stepper motors, the control system will be servo compatible but it's quite costly. I've had a couple of great opportunities recently to play around with some Kuka and ABB robots and I can tell you that they are beautifully made and they have some very clever little tricks to them that I will be incorporating into my design, but overall they are quite simple devices. The difficulty is in the control systems and the manufacturing precision.
