AnaI found a tutorial here on how to translate Morse code to text and have started stripping it away since we're not going to be using a single-lever paddle, and also found some code for an iambic keyer (a kind of dual-lever paddle)... I'm going to attempt to combine the 2.
In the meantime, Cat has found a tube of suitable size and is working finding/making a bipolar pressure switch.
