I put together this homebrew computer based on a 68EC000 CPU, with about 120-150 USD in parts cost (depending on where you get your parts). Specs:
* 10 or 12 MHz clock on the CPU (even with the hand-wired board)
* 512 kbytes of flash + 512 kbytes of RAM
* 68681 UART + GPIO

There is a video series on YouTube that covers how to build this computer, including the theory of how it works as well as the construction. I've also created a webpage with some documentation (parts list, schematic, etc) and blog about the build process.
